These are the “dirtiest” pathogenic bacteria in eggs

Researchers once tested commercial eggs in three areas: Fangshan District, Haidian District and Shunyi District in Beijing. The results showed that the detection rate of E. coli on the eggshells of eggs in the three regions was relatively high, with an average carriage rate of 80%; the average carriage rate of Salmonella was 15%; and the average carriage rate of Staphylococcus aureus was 5%.

Salmonella and E. coli can be detected on eggshells with obvious feces and dirt on the surface, and the number of colonies is larger. On the other hand, E. coli can be detected on eggshells with a relatively clean surface, and the number of colonies is small.

Eggs are contaminated after laying. Eggs with less surface contamination (eggs that look clean) will take a certain amount of time to be infected by microorganisms and reach the contents. Generally, if stored at 25°C for 3 days, salmonella can penetrate the eggshell. And the shell membrane infects the egg contents; for eggs with heavy surface contamination, microorganisms will multiply in a short period of time and invade the inside of the egg.

Salmonella needs to be vigilant, severe cases may cause death

Salmonella is a major foodborne pathogen commonly found in eggs, meat and raw milk.

Salmonella may contaminate eggs from the reproductive tissue of infected hens before the shell is formed, which can also contaminate the interior of the egg.

◎Purchase eggs

When buying eggs in the supermarket, choose eggs that are clean and have intact shells. Eggs with more contaminants on their shells and eggs with cracks are more likely to be contaminated by pathogenic bacteria, so it is best not to buy them.

◎Save eggs correctly

After you buy it home, you can store it in a cool and dry place, preferably in the refrigerator, and store it separately from fruits, vegetables, meat, etc. to avoid cross-contamination.

Under normal circumstances, purchased eggs do not need to be washed. This is because there is a protective film on the surface of the egg shell, which can reduce the entry of microorganisms into the inside of the egg. If you wash it too much, the protective film will be damaged. Even if you put it in the refrigerator, the egg will not Very easy to spoil.
